Tilapia with Prosciutto and Sage

The tilapia soaks up the flavor of the prosciutto creating a gourmet meal in only 15 minutes!

1Cut fillets lengthwise into separate smaller and larger sides. Pat dry and season with black pepper to taste.
2Place 1 or 2 sage leaves on each fillet, using 1 leaf for smaller pieces and 2 for larger. Wrap each fillet in a slice of prosciutto.
3Heat 2 teaspoons of olive oil in a 12 inch nonstick skillet over medium high heat. Cook larger fillets for 4 minutes, then flip and heat until cooked through, about another 3 minutes. Transfer to a platter and cover loosely with foil to keep warm.
4Heat remaining 2 teaspoons olive oil in the skillet and cook smaller pieces of fish about 2-3 minutes per side.
